本场长崎风蜂蜜蛋糕材料:蛋中型8个(大型的话7个) 砂糖300g 蜂蜜大匙4 热水(或温milk)50cc上面両种混和溶解放置一旁。高筋麪粉200g 烤盘纸的模型(约20*20cm) 橡皮刮刀 直径约23cm的碗盆(bowl) 手提打蛋器作法1先打蛋、砂糖一次全部放入、手提打蛋器用高速打约10分钟、沿着碗盆边移动均匀地打至起泡。2将溶解好的蜂蜜加入、再打1~2分钟。3手提打蛋器改中速、高筋麪粉分2~3次加入、混合2~3分钟。这时注意不要打出大气泡来、也不要留下粉球团。4停止手提打蛋器、用先端提起麪糊、试写一个日本字(の)。如果能清楚地看出此字就表示打蛋完成。这时考箱预热170℃~180℃。5将麪糊放入模型、注意不要沾到周围。使用橡皮刮刀垂直正立地像切麪糊似的縦、横切几次、如果有泡泡出现的话、軽軽的抚掉泡泡、这叫做切泡。这道过程要重复几次。6模型放置于考箱的天板上、放入考箱的中段。大约考1分之后取出、以5)的要领切泡、再度放入考箱、这大概重复両次程度。之后考8~10分钟、至表面有点焦色。7这时把天板移动到下段、考箱设定150℃~160℃、大约考60分钟。8表面均等的考成浓茶色之后取出。9立刻将新闻纸的模型取走、放置于考网上、剥下侧面的吕箔纸。1张开大约能包住蛋糕的玻璃纸、蛋糕的上面向下放置。底部的吕箔纸也全部剥开、在热热的时后用玻璃纸全部包起来。
