酱油酱油soysauce用豆、麦、麸皮酿造的液体调味品。(色泽红褐,有独特酱香,滋味鲜美,有助于促进食欲。是中国的传统调味品。酱油是从豆酱演变和发展而成的。中国历史上最早使用“酱油”名称是在宋朝。此外,古代酱油还有其他名称,如清酱、豆酱清、酱汁、酱料、豉油、豉汁、淋油、柚油、晒油、座油、伏油、秋油、母油、套油、双套油等。755年后,酱油生产技术随鉴真大师传至日本。后又相继传入朝鲜、越南、泰国、马来西亚、菲律宾等国。酱油用的原料是植物性蛋白质和淀粉质。植物性蛋白质普遍取自大豆榨油后的豆饼,或溶剂浸出油脂后的豆粕,也有以花生饼、蚕豆代用,传统生产中以大豆为主;淀粉质原料普遍采用小麦及麸皮,也有以碎米和玉米代用,传统生产中以面粉为主。原料经蒸熟冷却,接入纯粹培养的米曲霉菌种制成酱曲,酱曲移入发酵池,加盐水发酵,待酱醅成熟后,以浸出法提取酱油。酱油工业正在打破传统的方法而逐步采用新方法。此外,诱变育种出优良突变新菌株及液体曲的应用,也是重要的发展方向。
