L-异亮氨酸分子式:C6H13NO2分子量:131.18CAS号:73-32-5性质:白色结晶性粉末。168-170℃升华,284℃分解。水中溶解度为41.2克/升(25℃),10%水溶液的pH 5.5-7.0。难溶于热醇(80℃为0.13%)和热乙酸,不溶于醚。制备方法:以糖、氨、D-苏氨酸为原料,经粘质赛氏杆菌(Serratia marcescens)发酵而得。或以糖、氨、α-氨基丁酸为原料,用黄色小球菌(Micrococcus flavum)或枯草杆菌(Bacillus subtilis;Aerobactor)发酵而得。用途:营养增补剂。L-异亮氨酸为人体必须氨基酸之一,每天最低需要量约0.7g,但过量食用将与亮氨酸产生拮抗作用,有碍发育。本品可强化各种食品,如小麦粉、麦谷蛋白、花生粉、马铃薯等所含异亮氨酸为限制氨基酸,宜于强化,该品还与其他必需氨基酸共用于氨基酸制备及氨基酸输液。该品也用于生化研究、细菌学及组织培养。
