麦芽糖醇分子式:C12H24O11分子量:344.31CAS号:585-88-6性质:由一分子葡萄糖一分子山梨糖醇结合而成的二糖醇。98%的商品熔点149-152℃。因吸湿性很强,故一般商品系含有70%麦芽糖醇的水溶液。水溶液为无色透明的中性粘稠液体,甜度约为蔗糖的85%-95%。难于发酵,具有非结晶性、保香、保湿作用。在pH值3-9时耐热,加热很难分解。与蛋白质或氨基酸共存时加热,基本上不起反应。在人体内不能被消化吸收,除肠内细菌可利用一部分外,余均无法消化而排出体外。易溶于水和醋酸。低热量,发热量1.67kJ/kg,相当于蔗糖的十分之一。制备方法:由淀粉经糖化酶分解成麦牙糖,再经高压氢化而得。用途:我国规定可作为冷饮类、糕点、浓缩果汁、饼干、面包、酱菜类及糖果的甜味剂,用量视“正常生产需要”而定。作为低热量的糖类甜味剂,适用于糖尿病、心血管病、动脉硬化、高血压和肥胖患者。因属非发酵性糖,可作为防龋齿甜味剂。亦可作为蜜饯等保香剂、粘稠剂、保湿剂和米果的品质改良剂。兼有改善糖精钠风味的作用。
