界面膜  有界面存在就有界面自由能。一种物质在界面发生吸附(富集于界面)使界面自由能降低,故物质易在界面吸附,形成一层成分与流体相内部不同的部分,其中溶质的浓度远大于相内部,这一由于物质富集而形成的界面层即一般所谓的界面膜。具有不对称的、"亲水-亲油"两亲分子结构的物质特别容易在油- 水界面或水表面上吸附,形成界面膜。极性有机物,如醇、羧酸、胺、酯,特别是有直碳氢链的,以及各种表面活性剂,皆容易在水表面上(或油-水界面上)铺展或吸附,形成表面膜(或界面膜)。    一般水不溶性的极性有机物(及表面活性剂)是通过自身(多半是液体)或在挥发性液体(如石油醚、甲醇、丙酮、苯、乙酸甲酯等)中的溶液在水面上展开成为界面膜。如果铺展物质的量很小或水面面积很大,则形成的表面膜是单分子层的,就叫做不溶性单分子膜,简称不溶膜。    水溶性的极性有机物和表面活性剂(如低碳醇、胺、酸和十二烷基硫酸钠等)的水溶液表面、通过溶质的吸附而形成的单分子膜、为可溶性单分子膜,简称可溶膜。    界面膜中的溶质分子运动可以看作是二维空间的分子运动,也有一定的状态方程加以描述,其形式与一般三维空间的状态方程相似,不过以面积A代替体积V和以表面压π 代替压力 p(见单分子膜和表面压)。例如界面膜中分子浓度极稀时, 其状态方程即为与pV=RT相似的二维理想气体的状态方程πA=kT, 式中k=R/NA,NA为阿伏伽德罗数。当界面膜中分了浓度增大以至于接近饱和时,界面上每个分子所占面积接近长条形"两亲分子"直立排列所占的截面积。不管分子量大小如何,同系物分子所占的面积基本相同,例如,脂肪酸在水面上的不溶膜,紧密排列时每个分子所占的面积约为0.20纳米2。这就说明脂肪酸分子立在表面上,而不可能平躺在表面上。 此时亲水的羧基朝向水中,疏水的碳氢链则逃离水而指向空气中,这就是界面膜中的分子定向作用。定向作用在可溶膜中也同样存在。
