宁武腌菜宁武历为边关要塞,文明之地。守兵烽屯,官宦蚁杂。粮草远距征集,蔬菜就地调剂,这是历史的需要,也形成了宁武人讲究吃菜的民风民俗。宁武腌菜主要分二大类:一是大菜,指常备菜,二是小菜,指现吃菜。腌制方式分为单一、混合两种。制作方法上主要有盐腌、酱腌、糖酸腌、生发、熟发和曝腌等。下面介绍的是城乡人民常食的几种。1、酱菜:酱菜是以萝卜、苤蓝、芥蔓菁、黄瓜、豆角、芹菜等作主料。以酱、花椒、大茴、鲜姜、粗盐作调料。先将大豆炒熟磨碎加麸皮作曲制酱;花椒、大茴用纱布包好;鲜姜用线串成串;入缸拌入粗盐充分搅拌。待秋菜收回洗净,萝卜去叶,苤蓝去皮入缸,用青石压实腌制一年即成。黄瓜、豆角选无籽、肉厚、细长的在阳光下晒至萎蔫,入缸,一年中可随采随腌。这种菜是乡下家家户户吃饭的必备菜,食用时从缸内捞出,清水冲洗后切成毛发细丝、猫耳方尖、骨牌薄片,加香油、味精拌匀入碟,拼成各种花样。口感咸甜、香脆。2、发酸菜。发酸菜是乡间家家户户必备的一宗大菜。以茴子白、芥菜(包括叶)为主料,以精盐、辣椒面为辅料。先将茴子白、芥菜切成细丝拌入辅料,入缸用青石压实,置阴凉处发一个星期后可食用,色青白相同间,吃起来酸甜香脆十分利口,酸菜腌水清凉爽口,香味浓厚,是清热解毒的一味良药。3、荒菜。顾名思义,它是旧时人们为备荒而做的一种腌菜,天长日久,由于精工细作形成了一种别具风格的小菜。腌制时,将选好的菜叶、碎小萝卜洗净入锅煮熟后切碎,拌匀入缸,不加任何辅料,青石压实置阴凉处发酵。一月后即可食用,食用时挤净腌水,加山药蛋丝、盐、花椒、葱花等调味品,包莜面饺子、烙火烧、或炒、烩均可,吃起来酸甜可口,开胃健脾。4、倒腌萝卜。选粗6分,长6寸左右的匀称萝卜,洗净置阳光下晒至半干,入缸。用粗盐过滤水腌没,青石压实,腌制一冬天后,次年春天将其出缸再晒干,入锅大火干蒸。出锅后加入酱油、味精、淡醋、料酒搅拌入闷缸,两月后启封开缸。这时萝卜表皮积盐霜,横断切见梅花状,色黑红似墨菊傲霜,煞是美观。口感顽精。细嚼慢品,回味醇香,甜咸适口。它除配饭吃外,还具有解乏镇静之功效。您如果有晕船晕车的毛病,带上点比吃晕车药还要灵验。5、曝玉钵。它是将肉厚个大的苤蓝去皮,中间挖洞,盛入由酱油、精盐、淡醋、味精、花椒、大茴等配制而成的腌汤,放置阳光下曝晒,直至苤蓝外观黑红为止。食用时把外表洗净,切成细条,配葱花香油,口感香脆,甜咸适中,风味独特,妙不可言。6、糖醋白菜。将大白菜去粗叶洗干净,控去水分破肚切成四瓣,用白糖、精盐、辣椒片按层边腌边洒。青石压实,待腌出水分,再将食醋加料酒倒入缸内。花椒用净纱布包好压入青石下,一星期翻缸一次,待翻三次后即可食用。色白雪、红玉,味辛辣刺鼻,口感酸、甜、辣、香,具有健脾胃、去痰清肺的功效。也是下酒的一味好菜。7、糖蒜。名为糖蒜,实配有苤蓝、蔸蒌、茴芩等。将大蒜去粗皮留细皮,苤蓝去皮切成各种花样,蔸蒌洗净选匀,茴芩去皮切成骨牌状入缸,再将红糖、酱油、花椒水、精盐配成的腌汤倒入腌没,压青石,一月后可随吃随取,色橙红。口感甜香,具有防病开胃之效。是一种下酒好菜。
