类蛋白反应分子式:CAS号:性质: 又称蛋白酶的转肽作用(transpeptidation)。蛋白酶作用于蛋白质后,不仅将蛋白质水解成小肽或氨基酸,还能将某些小肽转变成较原来肽分子量高的肽。目前大多数人认为是蛋白酶的转肽作用的结果,还促进了氨基酸酯的转移氨基酸的作用,即将氨基酸转移给另一条肽链。蛋白酶类蛋白反应(转肽作用)也有其重要的应用价值。首先,可利用制造出对人体营养来说是最理想的肽,或者将原来缺乏某一必需氨基酸的肽,通过此反应补上该种氨基酸,或者从比率上改造肽,提高蛋白质的利用率。其次,除提高添加剂到某肽段中必需氨基酸,提高其营养价值之外,还可避免游离氨基酸在烹调时遭受破坏(如赖氨酸、甲硫氨酸等)。第三,在氨基酸酯中,烷基链越长疏水性越强,类蛋白反应越容易进行。利用这一性质可将亲水性氨基酸,如谷氨酸等添加到某一肽中,可改变该肽原来的功能性或增加某些功能。此外,还可用此法使蛋白脱臭、脱脂、脱色。
