芽孢分子式:CAS号:性质:又称内生孢子,牙胞。某些细菌的生长发育后期,在细胞内形成的圆形或椭圆形、含水量低、抗逆性强的休眠体。因每一细菌细胞仅生一芽孢,故非繁殖体。若环境适宜,芽孢可发芽成正常营养细胞。芽孢具极强的耐热、耐辐射和耐化学药物等能力,是细菌抵御不良环境的特殊构造。其休眠期可达几年、几十年或更长。产芽孢细菌主要有两属,一为好氧的芽孢杆菌属(Bacillus),另一为厌氧的梭菌属(Clostridium)。形成方式为细菌的原生质逐渐浓缩,呈一壁厚、层次多、含水量低、折射率高、富含吡啶-2,6-二羧酸(DPA)和钙离子的芽孢。典型的芽孢自外至内由孢外壁、芽孢长、皮层和核心(包括芽孢壁、膜、质和核区)四部分构成。芽孢在芽孢囊(即细菌细胞)中着生部位有中生、偏生和端生三类。芽孢可用于细菌鉴定、菌种筛选和保藏中。因其耐热性强,也用于检测灭菌的效果。芽孢的杀灭对发酵生产的正常运转、罐头食品质量的控制、动植物传染病的防治和保证生命科学实验的进行都有重要作用。在高温灭菌中的灭菌温度就是根据杀灭最耐热芽孢的要求提出的。能否形成芽孢是鉴定细菌种的特征之一。只有杆菌中的好气性芽孢杆菌属、厌气性梭状芽孢杆菌属,球菌中的生孢八迭球菌属及螺菌属、弧菌属中少数产生芽孢。
