苹果酸苹果酸malicacid分子式HOOCCHOHCH2COOH。又称羟基丁二酸。广泛存在于未成熟的水果如苹果、葡萄、樱桃、菠萝、番茄中。苹果酸分子中含有一个手性碳原子(见不对称原子),有两种对映异构体,即左旋苹果酸和右旋苹果酸,其结构式分别为:天然存在的为左旋苹果酸,为无色晶体;熔点100℃,加热至140℃左右即分解成丁烯二酸;溶于水、乙醇、丙酮中。苹果酸含有羧基和羟基,具有这两种官能团的性质,例如与醇作用生成单酯或双酯。苹果酸不能形成酸酐,但易形成环状交酯。由反丁烯二酸钙经延胡索酶发酵水合,首先生成左旋苹果酸钙,酸化后得左旋苹果酸。若将反丁烯二酸或顺丁烯二酸经高温高压催化加水,可生成外消旋苹果酸。右旋苹果酸可由外消旋体拆分制得。苹果酸广泛用于食品工业,如制造饮料。苹果酸钠是无盐饮食的调味品。苹果酸酯可作人造奶油和其他食用油脂的添加剂。苹果酸也是制造醇酸树脂的原料。
