黄曲霉分子式:CAS号:性质:谷类及其他农作物常见的霉变菌。最适生长温度为37℃左右,生长温度范围为6~46℃。由黄曲霉和寄生曲霉(Asp. parasitieus)产生的一类低分子化合物(分子量350左右)——黄曲霉毒素。污染粮食、油料作物的种子,其中以花生、玉米最易被污染。黄曲霉毒素的种类很多,其中以黄曲霉毒素B1毒性最强。结晶黄曲霉毒素B1极为稳定,高温(200℃)、紫外线照射都不受破坏。对动物、植物和微生物具有很强的毒性,致癌力最强,还能引起突变和导致畸形。与人的肝癌有密切关系,也能引起人的急性中毒死亡。在中性、酸性溶液中很稳定。在强碱溶液中能有效降解。
