甘油醛甘油醛glyceraldehyde一种单糖。分子式HOCH2CHOHCHO。为最简单的醛糖,分子中含有一个手性碳原子(见手征性),有一对对映异构体:D-甘油醛和L-甘油醛。它是决定碳水化合物构型D型和L型的参考标准。图片D-甘油醛的比旋光度7+8.7°(水,C=2),L-甘油醛+8.7°(水,C=2)。D-和L-甘油醛均为油状液体。其外消旋体D,L-甘油醛为无色晶体,熔点145℃,可真空蒸馏(浴温140~150℃/0.8毫米汞柱)。它容易通过烯醇化作用异构化为二羟基丙酮,在水溶液中呈平衡混合物,称丙糖。甘油醛因其醛基很活泼,一般制成缩醛保存。L-甘油醛二甲缩醛的沸点126~129℃(17~20毫米汞柱),-20.9°;D-甘油醛二甲缩醛的沸点127~129℃(17毫米汞柱),+21.2°。从L-山梨糖氧化断裂可制得L-甘油醛,D-果糖氧化断裂可制得D-甘油醛;也可由3-氨基-2-羟基-丙醛与亚硝酸反应制得相应的甘油醛。
