乳状液乳状液emulsions一种液体以液珠形式分散在另一种与它不互溶的液体中形成的分散体系。液珠称分散相(也称内相或不连续相),另一种连成一片的液体称分散介质(也称外相或连续相)。液珠半径一般为10-7~10-5米,所以乳状液属于粗分散系统。乳状液一般由水和与水不互溶的有机液体(统称为油)所组成。根据分散相和连续相的不同,将乳状液分为水包油和油包水两种类型。前者油是分散相而水是连续相,表示为油/水(或O/W);后者水是分散相而油是连续相,表示为水/油(或W/O)。例如牛奶和石油原油就分别是油/水型和水/油型乳状液。乳状液是多相分散系统,具有很大的液-液界面,因而有高的界面能,是热力学不稳定系统,其中的液珠有自发合并的倾向。如果液珠相互合并的速率很慢,则认为乳状液具有一定的相对稳定性。另外,由于分散相和连续相的密度一般不等,因而在重力作用下液珠将上浮或下沉,结果使乳状液分层。为了制备较稳定的乳状液,除了两种不互溶液体外还必须加入乳化剂。常用的乳化剂是表面活性剂、高分子物质或固体粉末,其主要作用是通过在油-水界面上吸附,从而降低界面能同时在液珠表面形成一层具有一定强度的保护膜。
