L-缬氨酸分子式:C5H11NO2分子量:117.15CAS号:72-18-4性质:白色单斜晶系晶体或结晶性粉末。熔点约315℃。易溶于水,溶解度(g/L):0℃ 83.4;25℃ 88.5;50℃ 96.2;65℃ 102.4。几乎不溶于冷乙醇和醚。5%溶液的pH5.5-7.0。对热、光及空气稳定,无臭,有特殊苦味。制备方法:用异丁醛作原料,有多种方法可合成外消旋体缬氨酸。例如异丁醛与氨生成氨基异丁醇,再与氰化氢合成氨基异丁腈,然后水解得到缬氨酸,外消旋本的拆分也有多种方法,例如用酰基-DL-氨基酸的酶进行水解,再利用游离氨基酸与酰化体的溶解度差进行分离。发酵法生产的缬氨酸皆为L-型,无需旋光拆分。发酵法的菌种为产谷氨酸微球菌,产氨短杆菌,大肠杆菌,产气气杆菌。用葡萄糖、尿素、无机盐等培养基。用途:属必需氨基酸。成人男子需要量为10mg/(kg·d)。L-型的生理效果为D-型的2倍。如缺乏可引起神经障碍、停止发育、体重下降、贫血等。作为营养增补剂,可与其他必需氨基酸共同配制氨基酸输液、综合氨基酸制剂。米制糕饼中添加缬氨酸(1g/kg),产品有芝麻香,用于面包亦能改善风味。
