乙烯酮  CH2=C=O 俗称烯酮。刺激性气体,沸点-56°C,在水和醇中会分解。可由丙酮或醋酸热解制得。由于分子结构中有极活泼的=C=O基,极不稳定,通常在生成后立即加以利用或在-8~10°C下制成双乙烯酮(后者可燃性液体,沸点127.4°C)贮存,使用时加热即分解出乙烯酮。乙烯酮主要用于制造醋酐及作乙酰化试剂,以制造多种工业有机化学品。    工业上制造乙烯酮有两种方法:    ①醋酸热解法 醋酸蒸气在700~750°C和稍加压下,以三乙基磷酸酯为催化剂,热解脱水:        CH3COOH─→CH2=C=O+H2O采用高铬钢制成的管式反应器,产物经除去水和未反应醋酸后,即得乙烯酮气体,其收率可达90%(以醋酸计)。    ②丙酮热解法 工艺类似醋酸热解法。丙酮蒸气在700~800°C下热解:        CH3COCH3─→CH2=C=O+CH4    由乙烯酮制得的双乙烯酮与乙醇反应所生成的乙酰乙酸乙酯(CH3COCH2COOC2H5)是染料、农药和医药的重要中间体(见染料中间体)。由双乙烯酮合成的乙酰基乙酰胺、乙酰基乙酰苯胺也广泛用作染料、医药(如维生素、解热药等)的中间体。乙烯酮还可以与巴豆醛反应生成山梨酸(反,反-2,4-己二烯酸)。山梨酸及其钾盐、钙盐是重要的食品添加剂。
