酒类品尝方法  由有经验的酿酒工作者或专职品尝者通过感官(眼、鼻、口)鉴定酒质的方法。迄今尚没有一种仪器可以代替人的感官的灵敏度和综合性,以及能比较准确迅速地对酒质(色、香、味、典型)作出完整的结论。    评定一种酒的优劣,需用物理法、化学法和感官鉴定法,但最终结果的确定还是以感官鉴定为准。鉴定要取样,取样要有代表性。样品要无沉淀物,取后立即放在规定的品尝温度处(冰箱或恒温箱),存放半天以上。品评时样品的温度极为重要。各种酒有其最适品评温度,如啤酒为8~10℃,红葡萄酒为15~20℃。    酒类品尝方法是:①评外观,观察酒的色泽和清浑及是否有起泡现象。带汽的酒则要观察起泡情况。根据观察结果写评语、记分。②评香气,分析各种香气(果香与酒香,酒花与麦芽香,糯米和陈酿香,酒香和窑香,本酒应有的典型香等),并根据酒的典型分析,有了初步概念后,再作第二次验证,然后写评语、记分。③评滋味,找出突出点和总的结合情况,作出评语,然后记分。在评味的同时也应找出典型性。前后结合,评出典型性,根据外观、香气、滋味的特点,综合其特点与回忆到的典型性作对比,写出评语,再记分数,最后定结论。将分数汇总,即可得出个人对这一样品所列的级别。根据需要,最后写出总评或提出对样品的改进意见。    鉴定的主要内容是评语和评分。评语有它一定的术语。术语有普遍性,如:醇和、协调、爽口等,也有专业性的,如香气、香味、酒体等。评分有百分制和20分制。中国现使用百分制;国际葡萄酒多使用20分制,但总的要求和方法基本上是一致的。
