【菜名】 白汤鲫鱼【所属菜系】 江苏菜【特点】 肉质鲜嫩,鱼形完整,汤色乳白,味香浓醇。【原料】主料:活鲫鱼2条(约重 500克)。配料:熟笋片 50克,熟火腿片2 5克,水发香菇2 5克。 调料:绍酒 50克,精盐7克,味精2. 5克,葱结10克,姜片 5克,熟猪油7 5克,熟鸡油10 克。【制作过程】(1)将鲫鱼治净,在鱼脊背两侧剞斜十字刀纹。(2)将锅置旺火上烧热,舀入熟猪油,烧至四成热时,将鱼放入,两面略煎后,加绍酒、葱结、姜片和清水7 50克,烧沸后撇去浮沫,盖上锅盖,移至小火上煮到汤色乳白时(约8分钟),再移至旺火上,加精盐、味精、火腿片、笋片、香菇,烧2分钟后端离火口,拣去葱、姜,盛入大汤碗,将火腿片、香菇片放在鱼身上,淋入熟鸡油即成。
