淀粉糊黏度测定仪分子式：CAS号：性质：测定淀粉糊化特性的一种仪器。是对淀粉性质进行研究和质量鉴定的重要工具。Brabeder公司生产的amylograph最有代表性。它是由测力弹簧、传感竖轴、传感器(搅拌器)、测量钵(试样杯)、辐射电炉、冷却水装置、驱动电机组、转速器、定时器、接点温度计、温度调整与自控系统、冷却自控系统、自动记录器等组成。以固定的升温速度加热(以1.5℃/min)、搅拌(75r/min)，试样杯中的淀粉浆，使淀粉逐渐升温糊化，黏度增大。当温度升至95℃时，保持约5～10min后，再使糊化物以1.5℃/min降温，降至50℃时，再保持3～5min。利用搅拌器在一定的角速度下旋转时随淀粉糊黏度变化所产生的扭矩，联动记录笔划出黏度-时间(温度)曲线，即淀粉的黏度曲线。由于扭矩与黏度成比例关系，故可根据曲线的高度和变化检定淀粉糊的黏度大小和热稳定性。在一般测定中，以68.6N作为1000Brabender黏度计单位(BU)。
