糖化分子式:CAS号:性质:淀粉加水分解成甜味产物的过程。是淀粉糖品制造过程的主要过程。也是食品发酵过程中许多中间产物的主要过程。糖化的方法,视要求产物的甜度以及相应的理化性质而定,基本上分为三类。(1)酸法。系以无机酸作催化剂,使淀粉水解,先生成中间产物糊精、麦芽糖等类低聚糖——寡糖,最终生成葡萄糖等单糖。有批量作业的加压罐法和连续作业的管道法。(2)酶法。系采用淀粉酶进行淀粉的水解。淀粉先经液化酶液化生成糊精等中间产物,再经糖化酶糖化生成麦芽糖以至葡萄糖。这样,由于全用酶水解故称全酶法。用液化酶和糖化酶,也称双酶法。(3)酸酶结合法。采用酸法液化,酶法糖化,互相结合的方法。由淀粉糖化制取的产品为淀粉糖品。通常以水解程度或糖化程度,按葡萄糖当量计值(简称DE值)为淀粉糖品的特征指标。淀粉糖品有糖浆、糖浆粉、结晶糖等。除高纯度结晶糖品外,多为各以葡萄糖、麦芽糖或果糖等为主的混合糖品。可直接作甜味剂食用,或用作食品工业的配料,作医药工业中工业发酵的糖原基料。
