材料(2人分量)碎牛肉 200克;洋葱 一小个;沙律油 适量;面饱粉 适量牛奶 1.5大茶匙;蛋 一细只;盐 少许;胡椒粉 少许肉豆 少许;牛油 2大茶匙调味料[a]蕃茄酱 1大茶匙,红酒 1大茶匙,水 2大茶匙美食做法:1.把洋葱切丝,落少量沙律油炒至变色,散开放于器皿上。将碎牛肉,已炒的洋葱、牛奶、鸡蛋、盐、胡椒粉及肉豆捞匀。2.用手去搓匀,当捞匀的材料产生黏性后,分开两等份。3.用手搓成圆球状,把空气压走。4.用一大匙沙律油将牛油溶掉,步骤四的材料放入镬煎,然后续渐向两边压平。起初用猛火煎,开始成形后便转用中火加热。5.约七成熟后,将调味料[a]加入便用镬盖盖好,蒸煎同时进行。请注意:如果材料捞得不好的话,煎的时候会碎,口感亦会很差。如果黏住双手的话,可在手上搽上些许油,在两手之间互相用力拧。这样做的话可把内里的空气走。
