阿松刈包阿松刈包(民国64年)刈包可称为中国人的汉堡。虽然只是简单的馒头夹肉,却令人回味无穷,成为下午茶、宵夜的最佳点心。台南有间历时二十五年的刈包店,每天可卖出上千份,它就是【阿松刈包】。 刈包其实是福州小吃,又名虎咬猪。【阿松刈包】负责人林清松先生的父亲,早年曾去过福州,学会了刈包的作法,加上林清松的祖父本身就从事香肠熟肉的生意,有了作馅肉的技巧,於是便在民族路赤崁楼附近开了刈包店,后来迁至永乐市场,再由林清松接掌刈包摊。 【阿松刈包】保留了福州传统口味,馅肉是用红槽滷过的,所以刈包摊上摆着的猪头皮、猪头肉、猪舌、瘦肉,红红的一片,与一般市面用酱油滷出来的深棕色馅肉,有很大的不同。刈包内的馅料(约上百斤)必须先熬煮三个小时,其中鲜美的肉汁,将盛小碗附赠给顾客品尝。煮烂的肉料,加上红槽、当归、八角等十二味中药材,再继续炖煮一个小时,如此肉料才会入口即化,并有红槽的特殊香味。馅肉制成后,将刈包从中切开,夹入馅肉,再加上炒酸菜及腌渍白萝蔔,最后淋上自制的花生酱,如此可口又不腻的刈包便完成了!
