长沙火宫殿小吃坐落在长沙坡子街中段的火宫殿是一家颇具经营特色的风味名店,其小吃不仅在国内享有盛誉,而且在国外也有一定影响。不仅店堂古朴雅致,而且还恢复了一批传统风味小吃。臭豆腐: 据有关资料介绍,臭豆腐源于北京。清康熙八年(即1669年),北京前门外延寿街一豆腐作坊王致和,某年夏天将受热发霉的豆腐撒上盐,几天后便有清香,味鲜美,喜出望外,上市出卖,一销而空,从此专门制作,生意兴隆。长沙臭豆腐以火宫殿的姜二爹的为最佳。姜十二岁学艺,从师访友,不断钻研摸索出了一手制作臭豆腐的高超技术。姜死后,其妻王满珍带徒传艺,将制作臭豆腐的“绝技”传了下来。现在火宫殿负责制作臭豆腐的刘涛云就是姜妻带的两个徒弟之一。臭豆腐的作法如下:挑选成色新、颗粒壮的黄豆,制成老嫩适宜的豆腐坯,经过用冬菇、鲜冬笋、曲酒、浏阳豆等原料制成的发酵水浸泡以后,取出沥干水,用小油锅慢火油炸,然后在豆腐中心钻一个小孔,滴入用辣椒末、味精、酱油、芝麻油配成的调味品。特点是:呈豆青色,外焦内软,质地细腻,鲜香可口,既有白豆腐的新鲜细嫩,又有油炸豆腐的芳香松脆。姊妹团子:据传宋太祖赵匡胤兵败安徽歙县,士气低落,当地人民送来米团,慰劳王师。从此赵思念再三,便从歙县召来几个人,令其再做,并命名为“大救驾”。火宫殿的姊妹团子系铜匠姜立仁之女所做。姊妹俩租得铺棚一间开设团子店。两人心灵手巧,专门制作甜咸两味的团子,故名“姊妹团子”。姊妹团子制作方法:用上等的糯米磨成细粉,包入鲜肉、香菇、味精、芝麻油等原料和成的肉馅,捻成尖顶平底长型锥体,蒸熟后宛如一座玲珑的白玉小宝塔。另一种是,包入白糖、麻仁(芝麻炒熟后碾成的细粉)的糖芯。一甜一咸,糍糯柔软,鲜甜可口。现在火宫殿的姊妹团子由专人制作,风味不减当年。馓子:据考证,馓子已有一千余年的历史。宋朝苏东坡曾为一做馓子的老妪写广告诗一首:“纤手搓来玉色匀,碧油煎出嫩黄深。夜来春睡知轻重,压匾佳人缠碧金。”火宫殿的馓子,系用优质白面及适量精盐拌和,抽成细条,卷成多环枕头形状,投入油锅炸熟。匀细色鲜,酥香松脆。神仙钵饭:火宫殿的神仙钵饭系李子泉所创。李十五岁时在长沙青石桥朱公和鞋铺学做鞋。一九三二年,他向姑母借得银元两块作本钱,在火宫殿内煮汤锅,卖卤菜。不久,他租得四间棚屋开饭店。他的饭馆虽小,颇有特色,品种小而全,地方风味浓。大米饭系挑选特级柔米,用小陶瓷钵蒸熟后,热乎柔软入口爽快,乐似神仙,因此得名。现在的神仙钵饭仍系小陶瓷钵蒸熟,风味别具,很受顾客欢迎。
