黄酒黄酒以稻米、黍米、玉米为原料,以曲和酒母作糖化发酵剂,酿制、压榨而成的一种酿造酒。色澄黄,清亮透明,具有独特的浓郁香气,味醇和、鲜美,营养成分丰富。黄酒除作饮料酒外,还可作中药引子和丸散膏丹的重要辅料以及烹调菜肴的调味料等。黄酒是中国历史最为悠久的传统饮料酒。以浙江绍兴生产的黄酒最为有名。黄酒的主要产区为浙江、江苏、江西、福建、台湾和上海等省市,各地所产的黄酒,由于原料、曲和酿造工艺的差异,品种繁多,各具地方特色。中国黄酒的定名方式很多。以产地为名,有绍兴酒、丹阳甜黄酒、山东即墨老酒等。在绍兴以外地区按绍兴酒工艺生产的称仿绍酒,以示区别。按米饭冷却方式定名,用凉水淋凉的称淋饭酒,摊凉的称摊饭酒,米饭分几次加入发酵醪中的称喂饭酒,增加米饭比例的称加饭酒等。为了保证产品质量,便于管理和组织质量评比,一般按成品酒中糖的含量将黄酒分为干黄酒、半干黄酒、半甜黄酒、甜黄酒4类。中国名黄洒:加饭酒、沉缸酒绍兴酒的主要品种有:①元红酒,又名状元红。用摊饭法酿造,发酵完全,残留的糖少,酒液澄黄,有独特的芳香,味甘爽微苦,是绍兴酒中的大宗产品,干型黄酒的典型代表。②加饭酒,生产方法与元红酒相同,因饭量增加醪液稠厚,控制发酵难度较大,酒液深黄带红,芳香浓郁,味醇和鲜美,是绍兴酒中的上品,半干型黄酒的典型代表。以坛装的陈年加饭酒,叫花雕酒。其坛外壁塑绘山水、花、鸟、人物等神话故事,包装精美,可作高档礼品。③善酿酒,用摊饭法酿造,用贮存1~3年的元红酒代水酿制而成。因发酵开始就有6%的酒精浓度,发酵缓慢,成品中糖分保持在7%以上,是半甜型酒的典型代表。酒色深黄,香气芬芳浓郁,味醇和甜美,是绍兴酒中的珍品。④香雪酒,用淋饭法制成甜酒酿后,拌入少量麦曲加糟烧酒抑制发酵,保留需要的糖分陈酿而成。酒液呈琥珀色,香味芬芳,味醇厚甜美,是甜型黄酒的典型代表。
