马奶子  蒙古族及其他一些北方游牧民族用马奶制作的一种传统饮料。早在成吉思汗十世祖孛端察儿时代(约10世纪前半叶)即已出现,称为"额速克"或"忽迷思"。蒙古汗国时代,中外旅行家对其制法均有记述。据《黑鞑事略》载,将马奶贮于革器,搅撞数日,味微酸,便可饮用。它通常色白而浊,味酸而羶,若延长搅动时间,则色清而味甜。有搅动七、八日以上的。马奶子可以久存,适于牧民远出放牧时饮用。据蒙古医书记载,它有滋补强身、驱寒、舒筋活血、补肾消食、健胃、治疗腹泻及水肿等功能,逐渐形成马奶疗法。来访宾客入帐时,常先在盛马奶子的革器内搅动数下,表示对主人的敬意。至今,马奶子仍被蒙古族视为圣洁的饮料。少数地区还举办马奶节,欢庆牧业丰收。
