单宁酸单宁酸tannicacid存在于多种树木(如橡树和漆树)的树皮和果实中,也是这些树木受昆虫侵袭而生成的虫瘿中的主要成分,含量50%~70%。又称鞣酸、鞣质。黄色或棕黄色无定形松散粉末,在空气中颜色逐渐变深;有强吸湿性;易溶于水、乙醇、丙酮;水溶液味涩;在210~215℃分解。单宁酸不是单一的化合物,化学组成比较复杂,大致分为两种:①缩合单宁酸,是黄烷醇衍生物,分子中黄烷醇的2位通过碳-碳键与儿茶酚或苯三酚结合;②可水解单宁酸,分子中具有酯键,是葡萄糖的没食子酸酯。后一种是常用的单宁酸。单宁酸的化学组分随原料来源而异,由中国五倍子得到的单宁酸含葡萄糖约12%;由土耳其五倍子得到的单宁酸含葡萄糖约16.5%。单宁酸是止血剂。在医药上曾用于治疗咽喉炎、扁桃腺炎、痔疮和皮肤疱症等,内用可制止腹泻、肠出血等。单宁酸能与金属、生物碱和糖苷(见苷)等生成沉淀,对这些物质具有解毒作用。单宁酸可用于鞣革、墨水制造、纸张和丝绸上胶、锅炉除垢等,还可作媒染剂、啤酒和葡萄酒的澄明剂、橡胶的凝结剂等。单宁酸本身毒性很低。
