辣椒精油分子式:CAS号:性质:又称辣椒提取物,辣椒油,辣椒精油。是含有许多种物质的混合物,主要含有辣椒色素类物质和辣味类物质构成。其代表物为辣椒红素、辣椒玉红素、辣椒黄素、玉米黄质、堇菜黄素、辣椒红素二乙酸酯、辣椒红素软脂酸酯等;辣味物质中包括辣椒素、辣椒醇、二氢辣素、降二氢辣素等。其他的有胡萝卜素、酒石酸、苹果酸等。由茄科中辣椒(Cdpsicum annuum),尤其是牛角椒(C.annuum Var.longum)等成熟(红色)果实经粉碎后用有机溶剂(乙醚、丙酮或乙醇)提取而得。产品暗红色至橙红色,略黏。有强烈辛辣味,并有灸热感,并可及整个口腔至咽喉。从石油醚中析出有光泽的针状结晶,熔点181~182℃。最大吸收光波为483nm,旋光度[α]cd+36º(氯仿中)。溶于丙酮、氯仿;也易溶于甲醇、乙醇、乙醚、苯;略溶于石油醚、二硫化碳;不溶于水和甘油而溶于大多数非挥发性油。耐热、酸、碱。遇Fe3+、Cu2+、Co2+等可使其褪色;遇Pb3+形成沉淀。如作为粗品,往往含有辣椒红素约50%、辣椒玉红约8.3%、玉米黄质约14%、β-胡萝卜素约13.9%、隐辣椒质约5.5%等等。其Scoville辣值(Scoville Heat units)在100 000至2 000 000之间。残留溶剂≤0.003%,重金属(以Pb计)≤0.002%。可部分溶于乙醇,但可溶于大多数非挥发油类(或食用油)。在食品工业中可作调味、着色、增香剂和健身辅助剂等。也可作为制成其他复合物或单一制剂的原料。目前市场上也把辣椒提物加工成水分散性制剂以扩大应用面。
