人造海胆风味食品人造海胆风味食品海胆,作为海产珍味食品,自古以来就深受人们的喜爱。用粒状植物性蛋白、食用油脂及鱼肉糜为原料,配制加工成外观,食感都与海胆黄相似的海胆状食品。这种方法采用的粒状植物蛋白,是用大豆或小麦通过常规方法制作的,粒度在10网目以下。粒度如果大于10网目,则制品粗糙,外观与食感和海胆相差很大。但用过细的植物蛋白效果也不好,应以60网目大小为限。食用油脂为豆油、菜籽油、椰子油等植物油,也可以用猪油等动物油脂。食用油脂一般是在粒状植物蛋白经用各种着色料、着香料、调味料等佐料调味加入,但也可以在调味搅拌捏和的同时加入,其用量为每100份粒状植物蛋白,加入20~100份,但最佳用量30~60份,否则效果也不好。加入的鱼肉糜必须是经加水稀释的,不然,制品将呈现鱼糕状,减少食感。在水产鱼糜制品中,一般每100份的鱼肉糜中加入水20~24份,而在本方法中,每100份鱼肉糜加入100~300份,但以150~250份的水量为宜,并加少量的食盐用擂溃机充分擂溃后使用。鱼肉糜的用量为每100份粒状植物蛋白,加入50~200份为宜。将上述的混合物,用通常的方法在90~100℃下蒸煮10~13分钟,即可得到具有海胆风味的食品,营养丰富,价格低廉。实例1将脱脂大豆按常规方法,用挤出成型机制成10~30网目大小的颗粒。取这种大小均匀的粒状植物蛋白100份,放入食品搅拌器中,然后加入着色料、调味料及海胆黄液体共100份加以搅拌,最后加入椰子油30份充分拌合。取阿拉斯加鳕鱼C级鱼糜100份,加入250份水和食盐3份,用擂溃机擂溃20分钟。然后取其150份,加入上述的调味的植物蛋白中,并进一步充分搅拌。将上述混合物在95℃下蒸煮20分钟,即得到具有类似海胆风味与食感的人造食品。实例2将脱脂大豆和小麦粉按2∶1的比例配合,按常规的方法用挤出成型机制成30~60网目颗粒。取这种大小一至的粒状植物蛋白100份,用红辣椒系色素着色,然后加入120份海胆黄之类的调味香料水溶液。用捏合机加以搅拌后,再加入50份的豆油与猪油按9∶1的比例混合的油脂,进一步充分搅和。取阿拉斯加鳕鱼C级鱼肉糜100份,加入2.5份食盐和200份水,用擂溃机擂溃30分钟,取其100份加入上述经调味的植物蛋白中,并进一步搅和均匀。将这种混合物用连续成型器制成厚2毫米、宽20毫米的形状,用蒸煮器在98℃温度下蒸煮15分钟,即得到风味、食感与外观都同海胆类似的食品。
