糯,常熟特产,俗称鸭血糯,属水稻科,红芒长杆,成熟时,谷粒皮壳呈浅紫色,脱皮精碾后,米粒殷红如鸭血,粳性,实际上是一种红粳稻米,故烧煮时,必须掌握其性能,一般以三、七相和为宜,即三成血糯七成白糯,成饭后即可做成各种点心,有补血滋阴之功效, 特别对年老体弱者, 确有强身滋补作用。以血糯做酒酿、粉圆子、八宝饭、红米酥、米粉等食品,不仅色泽美观,而且香甜可口,据说从明代起就成为朝延贡品,清末在北京“垂廉听政"的叶赫那拉氏慈禧太后, 最爱吃用常熟血糯, 供宫廷食用近几年,随着经济发展和人民生活的改善, 血糯已成为宴席上的必备佳品,列入甜食中的名点。常熟特产水稻品种,亦名红莲糯。为清康熙间栽培稻种变异而来,因其色红如血,故名。历史上曾被列为贡米。1949年后,经常熟农业科学研究所培育改良,1983年正式定型,取名矮杆鸭血糯。此米蛋白质含量高,有强身补血之功效,民间视为营养和滋补食品,名菜馆则专用以制作常熟传统名点"血糯八宝饭"及"炒血糯",在江南一带享有盛誉,被列入《国际菜谱》。
