甲基环戊烯醇酮分子式:C6H8O2分子量:112.13CAS号:80-71-7性质:白色结晶性粉末。具有槭树和独活草似香气,在稀释溶液里呈槭糖—甘草风味,熔点105-107℃。溶于乙醇(1g溶于5ml 90%乙醇)、丙酮和丙二醇,微溶于大多数非挥发性油,1g溶于72ml水,易溶于沸水。制备方法:由甲基呋喃与二甲胺制得。用途:我国GB2760-86规定为允许使用的食用香料。主要用以配制槭、熏烟、奶油硬糖、和杏子等型香精。
