啤酒酵母分子式:CAS号:性质:旧称啤酒酵母。子囊菌亚门半子囊菌纲内孢霉目酵母科酵母属的一种常见真菌。细胞圆形、卵形或椭圆形。直径2.5~10.0μm,长4.5~21.0μm。一般不产生假菌丝,只在玉米粉琼脂上形成。在厌氧条件下能发酵葡萄糖、蔗糖、麦芽糖或半乳糖产生乙醇和二氧化碳。通常以芽殖方式进行无性繁殖。有性繁殖形成子囊孢子。当双倍体营养细胞增大在以乙酸盐作主要或惟一碳源,同时氮源不足的培养基上时,易形成子囊孢子。放线菌酮(100mg/L)可抑制生长。酿酒酵母是著名的工业菌种,广泛用于酿酒、发面,生产酒精、甘油、酵母单细胞蛋白,以及用于提取核酸、麦角甾醇、辅酶A、辅酶I、细胞色素C、凝血质和ATP等生化药物。因其富含蛋白质、酶类和维生素等,故可供药用、食用和饲料用。有的用于饲料发酵。近年来,广泛用作遗传工程中的优良受体菌,用于生产干扰素等多种多肽类药物。广泛分布于水果、蔬菜表面以及果汁、酒曲和果园土中。
