合阳踅面踅面，是陕西合阳独有的地方风味食品。有的人写成“旋面”，是因为“旋”字在合阳方言里念“踅”。“踅”字是个冷僻字，清代合阳有人编了一本《土音杂字》，出于好心，找了一个古音又读“xué”的“页”字来为“踅”字注音。但知道这个古音的人实在太少了，结果弄成拙，大家都按本音读“yè”，而没有人读“踅xué”，外地人到合阳更是按字读音，这样一来，便把“踅面”弄成“页面”了，实在是一大误会。踅面用荞面做成，分为磨面、和面、摊面、切面、下面五道工序。卖踅面的人讲究自己动物，把荞麦拣净淘好，磨成细面。和面时要用能装四五十斤的大瓷盆，在面粉里添上水，用一根粗木棒顺同一方向搅拌，这是关键的一环，必须稀稠得当，搅拌均匀。面糊和得好，摊出的面更好。摊面用的是物制的铁鏊，重达40余斤，直径二尺多。舀一勺和好的面糊倒在鏊中心，用半月形的木踅子划开摊平，据说“踅面”即由此得名。稍顷，待一面受火变硬翻过来烘烤另一面，烙到七八成熟，叠在一起，折成四折，用刀切成细丝，讲究切成的宽窄和面饼薄厚一样，四棱见线，才显功夫。切好的面码在木箱在里备用。吃时把水烧开，再放少许盐，以防面入锅中变粘。抓一把切好的面投入锅中，用筷子须锅一搅，便可捞起。外地人见状总怀疑这面是否变熟，其实完全不用担心，因为在鏊上已烙至七八成，再在沸汤中一烫，便完全熟了。或干捞，或带汤，悉听尊便，须手再用笊篱捞一些鱼儿粉，然后调上大油（白油）、大油辣椒（红油）、清油辣椒、盐、醋、蘸一点花椒面，撒一捏葱花或韭菜花，便可食用了。吃踅面时大油必不可少，荞面调上大油，才软和好吃。外地人一是嫌荞面看起来黑，其貌不扬；二是怕不熟；三是对红油辣椒望而生畏，但若吃上一碗，便觉味美可口，咬到嘴里筋，吃到肚里香，方知合阳人为什么对踅面感情极深。合阳人不分男女老少，都喜食踅面，上会赶集，少不了两碗踅面，一个个吃得满嘴红油，即使是穿着入时的大姑娘小媳妇也丝毫不觉难为情，反而却觉得这才吃出味儿来了。逢到过春节，许多家都是专门订做几十斤，准备好红油辣椒，以便招待亲朋好友；碰到接待外地来客，踅面更是饭桌上必不可少的保留节目。在合阳各地都可以吃到踅面，坊镇踅面被称为正宗，高手辈出，每逢集日，数十家踅面各呈民彩。近半个世纪来则以田振江的踅面最为出名
