大米淀粉大米中的淀粉和大米蛋白质结合很紧密，用简单的水洗方法是不能将它们分离开来的。因此，单纯地以大米为原料来制取大米淀粉是不经济的。由于大米蛋白的营养价值高，并且是一种很好的植物蛋白质，对人体十分有益，它的氨基酸配比很适合人体保健需要。在用大米制取大米蛋白的同时提取大米淀粉是一举两得的好办法。制作方法 为使结合紧密的大米蛋白质与淀粉分离，采用大米蛋白质溶解的方法，一般用碱液进行处理。1.浸渍：先将大米放入浸渍槽中，加入大米用量5倍的0.3～0.5％氢氧化钠(苛性钠)溶液，浸渍24小时，使大米软化和萃取蛋白质，浸渍温度常为50℃。然后排出碱液，用清水洗涤一次，再加入新碱液浸渍36～38小时。2.磨浆：大米经过浸渍处理之后，吸水膨胀，以用手指捏压即碎为度。用磨子或锤片粉碎机湿磨成浆，磨时不断加入适量的0.3～0.5％的氢氧化钠溶液。3.分离：将米浆沉淀或送入离心机中分离，所得的湿淀再用清水多次漂洗，精净，再行干燥即可得大米淀粉。4.回收蛋白质：剩下的大米氢氧伦钠浸渍液用酸或二氧化硫中和到蛋白质的ph等电点(ph6.4)，经脱水和离心机分离处理后，可回收其中的蛋白质。用这种方法处理，工艺简单，加工费较低，用它制取的蛋白质，大都可作为动物饲料组成物。
