阿斯巴甜分子式：C14H18N2O5分子量：294.31CAS号：22839-47-0性质：白色结晶性粉末。双熔点约190℃和245℃。微溶于水（约1%）和乙醇（0.26mg/100ml）。无臭、有强烈甜味，其稀溶液的甜度约为蔗糖的100-200倍。其甜味与砂糖十分相似，并有清凉感。0.8%水溶液的pH值为4-6.5。在水溶液中不稳定，易分解而失去甜味，低温时和pH值3-5时较稳定。制备方法：由L-天冬氨酸和L-苯丙氨酸甲酯缩合而得。用途：按我国GB2760-90规定可用于各类食品，最大使用量视正常生产需要而定。按FAO/WHO（1984）规定，可用于甜食，用量0.3%，胶姆糖1.0%，饮料0.1%，早餐谷物0.5%，以及配制用于糖尿病，高血压、肥胖症、心血管患者的低糖类、低热量保健食品，用量视需要而定。亦可用作风味增强剂。
