[原料/调料]材料a:大白菜 4叶鹌鹑蛋 12个洋菇 12个香菇 2朵材料b:葱 2支辣椒 1条盐 2小匙糖 1/3大匙香油 1/3大匙白胡椒粉 1小匙高汤 2杯[制作流程](1)将所有材料分别洗净,大白菜叶切5公分片,葱切段,辣椒切片,香菇泡软後,切丝备用。(2)将鹌鹑蛋用热油炸至金黄色,捞起将油沥乾。(3)将锅子预热,放入葱段、辣椒片爆香,再放入香菇丝略炒後,加入大白菜翻炒至半软後,放入洋菇、鹌鹑蛋翻炒数下後,加入所有调味料,以大火熬煮至大白菜软化熟透(约需5~8分钟)熄火,盛起放入盘中即可食用。鹌鹑蛋炸过後,皮qq脆脆,口感很好;大白菜耐煮,当作火锅或卤菜的材料都很适合。
