脱氢乙酸 学名3-乙酰基-6-甲基-脱(2)氢吡喃2，4-脱(3)氢二酮。白色结晶性粉末，无嗅无味，无刺激性。分子量166.10。难溶于水.在弱碱性水溶液(pH值7-8)中溶解度较大。易溶于热乙醇。有吸湿性。对光和热稳定。受热易升华。在热强碱中易破坏。对酵母、细菌、霉菌等多种微生物有良好的抑制作用，进入机体后，在生物转化过程中，分解为2，6-二甲基-4-吡咯和2，6-二甲基-吡咯-3-羧酸等代谢产物。 生产方法：主要采用脱醇缩合法。以乙酰乙酸乙酯为原料．经脱酯缩合反应而得。 用途：化妆品防腐剂。属有机酸类防腐剂。添加量一般为0.02％-0.2％。当化妆品pH值小于5时，添加量为0.1％。对微生物的最低抑菌浓度为：黑曲霉和黄曲霉0.04％，桔青霉0.03％，枯草杆菌0.05％。蛋白质会影响其防腐活性。
