甘油酯分子式:CAS号:性质:又称脂肪酸甘油酯。通常指由甘油和脂肪酸(饱和的和不饱和的)经酯化所生成的酯类。根据所用脂肪酸分子的数目可分为甘油-(脂肪)酸酯C3H5(OH)2(OCOR)、甘油二(脂肪)酸酯C3H5(OH)(OCOR)2和甘油三(脂肪)酸酯C3H5(OCOR)3。高碳数脂肪酸(俗称高级脂肪酸)的甘油酯是天然油脂的主要成分。其中最重要的是甘油三酸酯,如甘油三油酸酯(油精)、甘油三软脂酸酯(软脂精)和甘油三硬脂酸酯(硬脂精)。甘油酯是中性物质。不溶于水。溶于有机溶剂。会发生水解。例如油脂用烧碱水解(皂化)后生成高碳数脂肪酸的钠盐(钠肥皂,即普通肥皂)和甘油。
