寡糖分子式:CAS号:性质:又称寡聚糖,寡糖。分子量300~2000。由2~10个单糖通过化学键连接而成的糖类的总称,分子量和分子数量上介于单糖和多糖之间,结构上与多糖相似。据单糖单位组成的数目,低聚糖可细分为二糖、三糖、四糖……。砂糖、乳糖、饴糖等是常用低聚糖,作为人类甜味和热量来源。自然界中存在的寡糖大都由吡喃己糖连接而成,有的寡糖也含有呋喃戊糖的成分。游离的寡糖可溶于水,难溶或不溶于有机溶剂;有的有甜味,有的显还原性,也有无还原性的寡糖,但被水解后生成的单糖均有还原性。一些寡糖以寡糖苷的形式存在。寡糖在细胞之间的识别、相互作用、信号传递及免疫等很多重要的生理过程中都起着重要的作用。现已通过酶法转换、化学转换及提取技术生产出近十种新型低聚糖,它们分别具有:(1)低热值;(2)耐腐蚀性,不形成产生牙垢及蛀牙细菌基础的葡萄糖,也不生成酸;(3)促进肠道内有益菌的活化、增殖以及增进肠道健康等生物功能,成为特定保健用食品的原材料。
