浉河——淮河流域的重要源头之一。在1000年前的唐代,茶圣陆羽曾到过这里,他将浉河岸边的河南信阳划归到淮南茶区,并在《茶经》中留下:“淮南茶,以光州茶为上品”的记录,陆羽所说的光州就是今天河南信阳的光山县。而宋代诗人苏东坡在品了信阳的绿茶之后说:“淮南茶信阳第一”。信阳产茶,因茶叶条索细秀锋尖,所以称其为“毛尖”。早在唐代之前,今天中国河南的信阳一带,就是历史上重要的绿茶产区。这里出产的“信阳毛尖”在1915年《巴拿马——太平洋国际博览会》上曾获得过金牌。“茶者,南方之嘉木也”。茶树本是南方的一种木本植物。河南的信阳虽地处中原,但是大别山区却是高山峻岭,群峦叠翠,溪流纵横,云雾弥漫。这种独特的自然生态环境,为茶树的生长提供了好的条件。茶农一般在农历的“谷雨”节气前后,采摘春茶,“芒种”前后采夏茶,“立秋”前后采秋茶。谷雨前后,由于此时的茶树嫩芽初发,数量很少,人们称这种茶为“春茶”也叫“跑山尖”。尤其“雨前毛尖”被视为珍品。采茶时还有许多讲究,上等的毛尖,只采嫩芽初展的1芽1叶,采回的青叶,用细软竹条扎成茶把,在锅内烘炒,然后要经搓揉、抓条、甩条等多道工序。加工好的茶叶,条索细秀,白毫显露。由于茶树的芽叶因季节不同,在味道上也会产生变化。故而当地有“春茶苦、夏茶涩、秋茶好喝舍不得”的说法。每当秋季来临,漫山遍野的茶树,枝叶茂盛。而茶农们则认为这是茶树越冬之前的调养期,所以一般秋茶并不是大量的采摘。古代的先民将饮茶看作一种修为。早在唐代,就流传着饮茶十德,比如“以茶散郁气;以茶养生气;以茶除病气……”等等。而今天的人们,将上好的“信阳毛尖”与山花野果配伍,突出了“以茶除病气”的健身目的。每逢闲暇,爱茶的人们聚集在一起,用浉河水冲泡着信阳的茶。一杯好茶直喝到褪了色,与其说人们在品茶,不如说是回味着因茶而发生的那些故事和融于茶中的那份醇甘。
