磷脂酰胆碱分子式:CAS号:性质:又称胆碱磷酸甘油酯,卵磷脂。是典型的磷脂类中磷酸甘油酯(phosphoglyceride)之一。在卵黄中含量甚多(8%~10℅),后发现在脑、精液、肾上腺、红细胞,以至动物组织、脏器、植物大豆、花生中都含有。可从中提取产品。通常产品为白色蜡状物固体,极易吸潮,但难溶于水。溶于氯仿、石油醚、苯、乙醇和乙醚。不溶于丙酮。在空气中不饱和脂肪酸能很快地被氧化。其构成的组分中的胆碱碱性甚强,在生物界分布也很广,有重要生物学功能。是细胞膜重要组分之一,还是血浆脂蛋白和胆汁的重要结构成分。乙酰胆碱是一种神经递质,与神经兴奋和传导有关,胆碱也是甲基移换中的供体。磷脂酰胆碱同脂肪代谢密切相关,并具有抗动脉粥样硬化、降低血胆固醇、总酯及护肝(防脂肪肝)作用。在上述分子结构式中,“R1”主要是饱和脂肪酸,“R2”主要是不饱和脂肪酸。在高等动物的肺组织中存在有二棕榈酰卵磷脂,这与肺内气体交换相关,,已知人红血球胞膜上是具有21种不同分子形式的磷脂酰胆碱,其主要是因为C1位和C2位上分别或同时有不同的脂肪酸之故。在临床上用于防治动脉粥样硬化、脂肪肝、神经衰弱及营养不良症。也可作食品、化妆品、药辅料的添加剂。通过磷脂酶A作用可转化为溶血卵磷脂。
