β-半乳糖苷酶分子式:CAS号:性质:又称乳糖酶。存在于肠道中催化β-半乳糖苷水解,使乳糖分解为半乳糖和果糖而促进其消化的酶。白色或淡黄色粉末,无臭,微甜。分子量100 000~850 000。在水中呈混沌液(大部分溶解),不溶于乙醇、丙酮。不同来源的酶最适pH值在4.0~7.5不等。最适作用温度37~50℃,低温保存。可由米曲霉(Aspergillus oryzae)培养液或制干酪时所得的乳清制得。作药物,适用于婴儿各种乳糖消化不良症及腹泻等。主要用于乳品工业,加入乳品中可降低乳糖结晶析出并增加甜度;也用于发酵和焙烤工业。由米曲霉培养液精制而得的乳糖分解酶,白色或淡黄色粉末,微甜。不溶于乙醇、丙酮。最适pH值4.0~4.5。从大肠杆菌培养液得到的分子量达135 000。也用作酶免分析的标记酶。
