合油酥合油酥在30年代就与赖桃酥齐名,同为重庆的名点。造型脱俗,色如白玉,以精制豆沙和糖蜜边油为心料,以酥脆滋润为特点。原料配方:水皮:特粉10公斤边化油3.3公斤油酥:特粉7.45公斤边化油3.6公斤心料:豆沙8公斤瓜元5公斤玫瑰1.3公斤核桃仁1公斤生边油3.75公斤川白糖4公斤蜜樱桃2公斤边化油0.5公斤撒粉(特粉)0.75公斤注:心料中的玫瑰可改用桂花,用量酌减。制作方法:1.水皮:边化油加水(每料加水5公斤左右)揉合,掺入特粉(特粉需过筛),搅拌10分钟左右,成为面团。2.油酥:特粉过筛,加边化油,揉合均匀即可。3.包酥:按水皮6成、油酥4成的比例分料,以水皮包油酥,用小开酥的方法擀制成酥皮。4.制心:瓜元:核桃仁剁成颗粒(大小如花生仁),樱桃切成四瓣,玫瑰搓散。以上材料同边化油和配料中部分川白糖拌合备用。生边油需将皮膜撕净,下锅煮到断生程度滤起,冷却后切成板栗大小的颗粒,同配料中其余部分川白糖拌合备用。用上述备用心料包裹,捏成圆坨,再将豆沙擀成块状,包裹上述心料圆坨,然后成型。5.成型:按皮6成、心6成的比例分料包心,用手工制成圆形,顶部点上红点。6.烘焙:用150℃左右的炉温,烘焙5~6分钟,制品呈白色,经检视酥皮起层时即出炉。冷却后包装。质量标准:规格:圆形而凸,略似无沿帽,饱满光洁,底部平整。不脱酥,不翻酥,不露心。色泽:雪白色,红点在顶部正中。组织:酥润细腻,剖面心料清晰。精蜜,边油颗粒大如板栗,晶莹有透明感。豆沙油浸,无杂质。口味:细嫩滋润,突出外酥内润的特点。甜度适中,有明显的玫瑰或桂花芳香。
