甘露糖甘露糖mannose一种单糖。分子式C5H11O5CHO。为多种多糖的组成成分。以游离状态存在于某些植物果皮中,如柑橘皮中,桃、苹果等水果中有少量游离的甘露糖,象牙棕榈子、酵母、红藻、血清球蛋白、卵类粘蛋白和结核杆菌中含有D-甘露糖的聚糖。甘露糖为白色晶体或结晶粉末,味甜带苦。+29.3°(水);β型的熔点132℃(分解),-17°→+14.6°(水)。溶于水,微溶于乙醇。D-甘露糖与氯化钙容易形成结晶化合物C6H12O6·CaCl2·4H2O,并显示复杂的变旋光作用。D-甘露糖可被酵母发酵。图片D-甘露糖可由富含D-甘露糖的聚糖(象牙棕榈子、酵母甘露聚糖等)水解制备。也可由D-甘露醇(海带制碘工业的副产品)在亚铁离子存在下,用过氧化氢氧化合成。也可由D-葡萄糖差向异构化,或由D-阿拉伯糖增长碳链等方法制备。
