DL-丙氨酸分子式:C3H7NO2分子量:89.090CAS号:302-72-7性质:无色至白色的结晶性粉末。258℃升华,295-296℃分解。易溶于热水,能溶于水,微溶于乙醇,不溶于乙醚和丙酮。制备方法:乙醛与氢氰酸反应生成氰醇,再与氨反应得到氨基腈,然后在碱性条件下水解生成氨基丙酸钠,经离子交换而得丙氨酸。用途:该品具有特殊的甜味,比沙糖甜,为甘氨酸的1.6倍,是最甜的一种氨基酸。丙氨酸对人体属非必需氨基酸,但可与丙酮酸产生可逆转化,与糖代谢有关,在生理过程中是很重要的物质。主要用作食品添加剂,可单独使用,也可与谷氨酸钠等制成复合调味品,其销量最大的是甜味复合调味剂。单独应用主要是作为咸菜和甜酱菜腌制的添加剂。此外,还用作醋、酱油、果汁的添加剂,一般用量为0.1%-0.5%。其主要作用是改善食品风味、味道,保持原色等,也提供甜味源。DL-丙氨酸也用作医药中间体。
