柠檬醛柠檬醛citral一种萜。分子式C10H16O。开链单萜中最重要的代表之一。存在于枫茅油和山苍子油中。天然柠檬醛是两种几何异构体组成的混合物。柠檬醛a(又称香叶醛)为无色油状液体,有柠檬香气;沸点229℃,密度0.8888克/厘米3(20℃);在空气中易氧化变黄。柠檬醛b(又称橙花醛)为无色或淡黄色液体;沸点120℃(20毫米汞柱),密度0.8869克/厘米3(20℃)。两种异构体都溶于乙醇和乙醚。柠檬醛a用氨性氧化银氧化得香叶酸。柠檬醛可从精油中分出;也可从工业香叶醇(及橙花醇)用铜催化剂减压气相脱氢得到;也可从脱氢芳樟醇在钒催化剂作用下合成。柠檬醛可用于制造柑橘香味食品香料,因易氧化并聚合变色,只用于中性介质中;还用于合成异胡薄荷醇、羟基香茅醛和紫罗兰酮,紫罗兰酮是合成维生素A的原料。
