赤藓红分子式:C20H6I4Na2O5·H2O分子量:897.88CAS号:16432-68-0性质:红色或红褐色的颗粒或粉末。易溶于水,可溶于甘油及乙醇,不溶于油脂。耐光性差,耐热性、耐碱性、耐氧化还原及耐细菌性均好,但对酸不稳定。制备方法:由荧光素碘化而得。将间苯二酚、苯酐和无水氯化锌加热熔融,得到粗制荧光素。粗品荧光素用乙醇精制后,溶解在氢氧化钠溶液中,再加碘进行反应。加入盐酸,析出结晶,然后将其转变成钠盐,浓缩即得。用途:该品可单独使用或与其他食用色素配合,用于糕点、农产水产加工品(樱桃、鱼糕、针锦八宝酱菜)等多种食品。我国食品添加剂使用卫生标准(GB2760-86)规定,赤鲜红在食品中最大使用量为0.05g/kg。此外,该品还用作药物和化妆品的色素。大鼠口服LD50为1900mg/kg,联合国粮农组织和世界卫生组织规定,人的一日允许摄取量(ADI)为0-1.25mg/kg。
