饼干  薄片状焙烤食品。以面粉为主要原料,一般配以较大比例的糖、油、乳、蛋等辅料,加入化学发面剂和少量水分调制成面团,成型为薄片状且具有一定形状和花纹的面坯,经烤制而成。触感较硬而组织酥脆,含水分在5%左右,能较长时间保存,使用和销售方便,可以在工厂集中生产,远距离销售。因而工厂规模较大,能采用较复杂而高效率的机械。各种饼干的生产工艺不同。以较常见的韧性饼干为例,其工艺流程为:原材料处理、面团调制、冲印成型、焙烤、冷却、包装。    冲印成型过程是在摆动式冲印机中完成,当冲头垂直冲到帆布传送带上以后,与下方的橡皮下模合模,并随帆布和面带向前摆动一步,然后摆回原位,帆布带就可连续等速前进。焙烤用烤炉与面包烤炉相似。出炉的饼干温度高达100℃以上,质地柔软易变形,应及时冷却到38~40℃,同时排出多余的水分,使组织保持干燥而酥脆。然后整理成叠按要求包装。饼干类产品种类很多,糖、油、蛋的配比各异,成型方法和产品特性也不相同。主要品种有:①韧性饼干:每百份小麦粉配起酥油12份,糖34份,加化学发面剂,冲印造型为凹花,表面平整有针孔,断面有层次,口感松脆。②酥性饼干:每百份小麦粉配起酥油32份、糖45份,加化学发面剂,辊切造0型,凹花凸花皆可,表面光滑,断面呈多孔性,口感酥松。③曲奇饼干:每百份小麦粉配奶油55份、糖32份、鸡蛋20份,挤花成型,花纹清晰,有突出的奶油香味,口感酥松。④苏打饼干:每百份小麦粉和淀粉配起酥油16份,酵母发酵和化学发面兼有,冲印成型,表面有均匀泡点,断面层次明显,具有发酵制的特有香味,口感非常酥松,多为咸味。⑤杏元饼干:每百份小麦粉及淀粉配糖84份、蛋57份,调成面糊机械搅打充气,挤压成型,表面呈自然细纹,断面有均匀细孔,蛋香突出,酥脆适口。⑥华夫(威化)饼干:每百份小麦粉及淀粉配油2份,加化学发面剂,剪切成型,多孔性结构,口感酥松,入口易化,可以夹糖芯或涂挂巧克力。
