豆腐豆腐bean-curd粮豆制品类加工性烹饪原料,豆制品的一种。古称小宰羊、菽乳、豆乳、脂酥、黎祁、犁其等。以黄豆、青豆或黑豆为原料,经浸泡、磨浆、过滤、煮浆、加细、凝固、成型等工序加工而成。豆腐是中国人发明的。最早的记载见于五代陶偲(903~970)所撰《清异录》小宰羊条。另有一说认为豆腐为公元前2世纪淮南王刘安创制,此说源于《本草纲目》记载。此外关于豆腐产生年代还有许多不同的说法。至宋代,豆腐已逐渐普及,并见于食谱。元、明间豆腐传往日本、印度尼西亚等地。清代传到欧洲。现在,豆腐在日本、美国等地深受重视,并被视为健康食品。在中国豆腐生产遍及全国各地,已由作坊手工操作发展到工厂机械化生产,并创制出花生豆腐、小豆豆腐、胡麻豆腐(又称麻腐)等新品种。以豆腐为原料可做成上百种菜肴,有些烹调师专门研究豆腐菜,甚至创制了豆腐宴。用豆腐制作的小吃也很多,知名的如长沙火宫殿臭豆腐,贵州雷家豆腐丸子,天津虾籽豆腐脑,山东泰安泰山豆腐面和临清撅腚豆腐,陕西汉中菜豆腐,杭州菜卤豆腐等。大豆蛋白属完全蛋白,不仅含有人体必需的8种氨基酸,而且其比例也接近人体需要。此外,还含有脂肪、碳水化合物、维生素和矿物质等。豆腐及其制品只含豆固醇不含胆固醇。豆固醇具有抑制人体吸收动物性食品所含胆固醇的作用,有助于预防一些心血管系统疾病。中医认为豆腐味甘性凉,入脾、胃、大肠经,具有益气和中、生津润燥、清热解毒的功效,可用以治疗赤眼、消渴、休息痢,解硫黄、烧酒之毒。
