蛋白质消化率分子式:CAS号:性质:一项衡量食物中蛋白质营养质量的生物学指标。为食物蛋白质中被消化吸收的氮量与该蛋白质总氮量之百分比,按下式计算:蛋白质消化率(%)=(氮吸收量/总氮量)×100% 如此计算出的消化率为“真消化率”(true digestibility)。式中代谢氮指来自肠道黏膜脱落细胞、肠道微生物、残存消化液所含的氮,即试验对象完全不摄食蛋白质食物的粪氮量。一般成人一昼夜粪代谢氮仅为0.9~1.2g,可略去不计,则计算出的消化率为“表观消化率”(apparent digestibility)。常规食物蛋白质的消化率,动物性的较好,如蛋类为98%,乳类为97%~98%,肉类为92%~94%。植物性的较次,如米饭为82%,面包为79%,马铃薯74%等。也与食物的调制有关,如焙炒的整粒大豆的蛋白质消化率不过60%,而制成豆浆及其制品的蛋白质消化率,可达90%以上。
