甾族皂苷 含甾族化合物的皂苷。皂苷是一类复杂的化合物，因其水溶液振摇时产生大量泡沫，与肥皂相似，故名皂苷。甾族皂苷元的基本骨架是螺甾烷： 在分子的六个环中，E环是含氧五环，并联在C16和C17上，F环多数是含氧六环，与E环以螺缩酮形式相联。分子中含有羟基,多数在C3位，还可在其他位置。C20、C22和C25为手征性碳原子。C20上的甲基都位于E环平面的背面,为α构型。C25上的甲基，位于F环平面上的直立键时，为β构型；位于平面下的平伏键时，为α构型。 甾族皂苷元主要存在于薯蓣科、百合科、龙舌兰科及茄科等植物中。目前已发现的甾族皂苷元近百种，最重要的是薯蓣皂苷元。中国近年来经对甾族皂苷植物调查后，已发现有许多种含甾族皂苷元的植物，其中以含薯蓣皂苷元的植物最多。常见的甾族皂苷元见表。 通常，将植物中含有甾族皂苷元的某些部分用乙醇或甲醇进行热萃取，萃取液蒸发后用酸或酶水解，即得甾族皂苷元及多种糖类。
