酸变性淀粉分子式：CAS号：性质：用酸处理一般淀粉乳使之改性的变性淀粉。属于可溶性淀粉。用酸处理后的淀粉，凝胶性增强，凝胶强度增高(酸变性玉米淀粉为最)，冷黏度与热黏度的比值增大。将1％～3％的盐酸溶液加入40％左右的淀粉乳中，在低于糊化温度(25～55℃)下保持搅拌10h以上，达到要求的黏度后用碱中和、过滤、清洗、干燥而成。在纺织工业中用作上浆剂、织物整理剂，造纸工业中用于压光和施胶，改进纸的抗磨性和印刷性。酸变性玉米适用于软糖果制造。
