丁子香酚  一种芳香酚,分子式C10H12O2。它主要存在于舌鸡香(或称丁子香)的油内及樟属肉桂叶的油内。纯的丁子香酚为无色液体;熔点-7.5℃,沸点253.2℃,相对密度1.0652(20/4℃);微溶于水,易溶于乙醇和多种有机溶剂中。丁子香酚可将红石蕊变蓝,与皮肤接触可以起泡,与三氯化铁的乙醇溶液作用呈蓝色。它与碳酸钾形成钾盐,由油内沉淀出来,再经矿酸处理,即得游离的丁子香酚。它也可用合成的方法制备。    丁子香酚在氢氧化钾中加热时,丙烯基的双键发生重排作用,变为与苯环共轭的α-丙烯基,得到异丁子香酚,经乙酰化和温和的氧化,α-丙烯基断裂,即得香草醛,它是一种重要的人造调味剂的主要成分。丁子香酚具有浓郁的石竹麝香的气味,是一种重要的调味剂。
